Ingredients

  • 1 1/2 cups strawberries, stemmed
  • 2 Tablespoons fresh lime juice
  • 5 Tablespoons honey, divided
  • 1/2 cup plain yogurt (whole or 2%)
  • 1/2 cup unsweetened coconut milk
  • 1 1/2 cups blueberries
  • 1/4 cup pomegranate juice
  • 1 teaspoon fresh lime zest

Instructions

  • Add the strawberries, lime juice and 2 tablespoons of honey to a blender. Blend until the mixture is smooth and fully puréed. Divide the strawberry mixture evenly among the popsicle molds, then freeze until firm, about 1 hour. Rinse the blender and set it aside for the final layer.
  • In a medium bowl, whisk together the plain yogurt, unsweetened coconut milk and remaining 3 tablespoons of honey until smooth. Pour the yogurt mixture evenly over the frozen strawberry layer. Insert popsicle sticks into the center of each mold and freeze until firm, about 1 hour.
  • Add the blueberries, pomegranate juice and lime zest to the blender. Blend until puréed. Pour the blueberry mixture evenly over the frozen yogurt layer, then freeze the popsicles until completely firm, at least 3 hours.
  • When ready to serve, briefly run the outside of the popsicle molds under warm water. Gently pull the popsicles from the molds and serve immediately.
