Crunchy roasted garlic chickpeas mixed with cherry tomatoes, cucumber, red onion, fresh basil and parsley, dressed with olive oil and red wine vinegar. This salad captures the bright, savory flavors of bruschetta and panzanella while keeping the dish light and satisfying. It’s easy to customize and tastes even better after the flavors meld overnight.
Ingredients
- 1 (14.5 oz) can chickpeas, rinsed and drained
- 3–4 garlic cloves, minced (reserve a couple for roasting and a couple for the salad)
- ⅛ tsp garlic powder
- Salt and freshly ground black pepper, to taste
- 1 cucumber, diced
- Optional: 3–4 marinated pepperazzi-style peppers, sliced (adds flavor if available)
- 8 oz cherry tomatoes, halved
- ½ small red onion, thinly sliced
- 2 tbsp olive oil (or use a small amount of seasoned oil from marinated peppers)
- 2 tbsp red wine vinegar
- 4 basil leaves, finely minced
- A handful of fresh parsley, minced (to taste)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with foil and lightly spray or oil it.
- Rinse and drain the can of chickpeas. To dry them, roll a handful at a time between two paper towels — this helps remove excess moisture and can loosen the outer skins. Removing skins is optional but can improve crispness.
- Place the drained, dried chickpeas in a mixing bowl. Add 1 minced garlic clove, ⅛ tsp garlic powder, salt and pepper to taste, and toss to coat evenly.
- Spread the chickpeas in a single layer on the prepared baking sheet and spray or drizzle lightly with oil.
- Roast the chickpeas for about 40 minutes, shaking or flipping them once halfway through, until golden and crunchy.
- While the chickpeas roast, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, mince the remaining garlic cloves, and chop basil and parsley. If using marinated peppers, slice them and reserve some of the flavored oil if you’d like to use it in place of plain olive oil.
- Combine the prepared vegetables in a large bowl. Add 2 tablespoons olive oil (or a small amount of marinated pepper oil), 2 tablespoons red wine vinegar, the minced basil and parsley, and salt and pepper to taste. Toss to combine.
- When the chickpeas are finished roasting, allow them to cool slightly, then toss them into the salad. Serve immediately if you want the chickpeas very crunchy, or let the salad sit in the refrigerator for several hours or overnight to let flavors meld — if storing long-term, add the chickpeas just before serving to preserve their crunch.
- Enjoy cold or at room temperature as a light lunch, side dish, or part of a mezze spread.
Notes
This salad is forgiving and adaptable: swap vegetables based on seasonality, add olives or a few shavings of Parmesan for extra richness, or include a protein like grilled chicken for a heartier meal. If you plan to make the salad ahead, consider storing the roasted chickpeas separately and tossing them in right before serving so they stay crunchy. The salad keeps well in the fridge for several days and often tastes better after the flavors have had time to develop.
