  • 2 tbsp olive oil, divided
  • 2 lbs chicken breast, cubed
  • 2 tsp salt, divided
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp onion powder

  • 1 yellow onion, diced
  • 1 tbsp minced garlic
  • 1/4 cup fresh basil, chopped
  • 10 oz can Rotel (diced tomatoes with chiles)
  • 1 lb dry spaghetti
  • 4 1/4 cups chicken broth
  • 1/3 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, shredded
  • 1/3 cup heavy cream

Instructions

  1. Heat a large pot over medium-high heat. Add 1 tablespoon of olive oil. Once the oil shimmers, add the cubed chicken along with 1 teaspoon of salt, pepper, paprika, dried oregano, onion powder, and garlic powder. Stir to coat evenly. Cook, stirring occasionally, until the chicken is fully cooked and lightly browned. Remove the chicken from the pot and set it aside on a plate.

  2. In the same pot, add the remaining tablespoon of olive oil. Add the diced yellow onion and cook for 3–4 minutes until it begins to soften. Add the minced garlic and cook about 15 seconds more, just until fragrant.

  3. Stir in the chopped fresh basil and the can of Rotel (diced tomatoes and chiles). Add the dry spaghetti—you may break the noodles in half so they fit more easily in the pot. Pour in the chicken broth and add the remaining 1 teaspoon of salt. Stir everything to combine, making sure the pasta is submerged in the liquid.

  4. Cover the pot and reduce the heat to a medium simmer. Cook for 10–12 minutes, stirring frequently to prevent the pasta from sticking together and to ensure even cooking. Continue until the spaghetti is tender and most of the liquid has been absorbed.

  5. Once the pasta is cooked through, return the cooked chicken to the pot. Stir in the mozzarella, Parmesan, and heavy cream. Mix until the cheeses melt and the sauce is creamy and well combined. Taste and adjust seasoning if needed. Serve warm.
