Antipasto Pasta Salad

A delicious, quick, and easy pasta salad full of fresh vegetables and Italian flavors.

Ingredients

  • 8 ounces whole wheat pasta
  • ½ pound ham, diced
  • ⅓ cup pepperoni, diced
  • 2 cups grape tomatoes, sliced
  • 1 sweet bell pepper, diced
  • 1 cup mozzarella cheese, cubed
  • ⅓ cup black olives, sliced
  • 2 cups dark salad greens
  • Banana peppers (optional)

Balsamic Vinaigrette Ingredients

  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon garlic powder
  • Pinch of Italian seasoning

Instructions

  1. Cook the pasta according to the package directions. Drain and allow it to cool.
  2. While the pasta cools, dice the ham and pepperoni, slice the grape tomatoes, dice the bell pepper, and cube the mozzarella.
  3. In a large bowl, combine the cooled pasta with the ham, pepperoni, tomatoes, bell pepper, mozzarella, black olives, dark salad greens, and banana peppers if using. Toss gently to combine.
  4. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, garlic powder, and Italian seasoning until emulsified.
  5. Drizzle the vinaigrette over the salad, toss to coat evenly, and serve. If you prefer, offer dressing on the side so guests can add their desired amount.
