Description

This salad delivers the texture and flavor contrast everyone loves: crunchy, golden chicken fingers paired with creamy avocado, crisp greens, tangy marinated onions, and roasted red peppers. It’s flexible—serve it warm, at room temperature, or chilled—and it makes a beautiful platter for entertaining. The recipe showcases a reliable grain-free flour blend for a delicious, extra-crispy coating without traditional wheat flour.


Ingredients

For the chicken fingers:

  • 1 cup (103g) King Arthur Paleo Baking Flour
  • 2 Tbsp hot paprika
  • 1 Tbsp granulated garlic
  • 2 tsp salt
  • ½ tsp black pepper
  • 2 large eggs, beaten
  • 1 pound boneless, skinless chicken breast, cut into strips
  • 1 cup coconut oil (for frying)

For the salad:

  • About 6 oz mixed greens
  • Salt for seasoning the greens
  • 1 can hearts of palm, drained and sliced
  • 2 avocados, sliced
  • Marinated red onions (prepared separately)
  • ¼ cup niçoise olives
  • 1 cup tomatoes, cut
  • 2 roasted red peppers, sliced into strips
  • Green Goddess dressing (or your favorite creamy herb dressing)

Instructions

For the chicken fingers

In a small food processor or bowl, combine the grain-free flour, paprika, granulated garlic, salt, and black pepper. Pulse or whisk until evenly mixed, then transfer to a shallow dish.

In a separate shallow dish, beat the eggs until smooth. Slice each chicken breast on a slight angle into approximately ¾‑inch-wide strips (about 5–6 strips per breast).

Working one strip at a time, dredge the chicken first in the beaten egg, letting excess drip off, then roll it in the flour mixture until fully coated. Place the coated strips on a lined baking sheet and repeat with the remaining chicken.

Line a plate with paper towels. In a medium skillet, heat the coconut oil over medium-high heat until it reaches roughly 350°F (or is hot enough that a test piece sizzles). If the coating seems to be browning too quickly, reduce heat to medium or medium-low to avoid burning.

Fry the chicken fingers in batches so they have room to cook evenly. Cook about 2 minutes per side, until golden brown and cooked through (approximately 4 minutes total per strip). Remove to the paper towel–lined plate to drain. For best results, change the oil between batches if it becomes overly dark or accumulates many crumbs.

To assemble the salad

Arrange the mixed greens on a large platter and season lightly with salt. Drizzle a little oil from the marinated onions or a bit of vinaigrette over the greens to add brightness.

Create sections of hearts of palm, avocado slices, olives, tomatoes, and roasted red pepper strips around the platter. Lay the warm chicken fingers over the salad, scatter marinated onions on top, and serve with Green Goddess dressing on the side for guests to add as they like.


Notes

  1. Grain-free flours behave differently from all-purpose wheat flour and tend to brown faster. Monitor the oil temperature closely to prevent burning; reducing heat slightly can help produce an even golden crust.
  2. Avoid overcrowding the pan when frying. Adding too many pieces at once lowers the oil temperature and can make the coating soggy. If you must cook more at once, allow the oil to recover heat between batches.
  3. If you have nut allergies, substitute with a suitable coconut-based flour blend. Conversely, if coconut is an issue, use an appropriate nut-only flour alternative. Always check ingredient labels for allergens.
  4. For consistently crisp results, consider refreshing the oil between batches when it becomes too cloudy or has many burned bits.
