  • 1/2 to 1 cup leftover broth or au jus, whatever is left
  • 4 mini flour tortillas, about 4 inches each
  • 1 cup shredded lettuce
  • 1/2 Roma tomato, halved lengthwise, sliced, and chopped
  • 2 slices provolone cheese, halved
  • 2 pepperoncini peppers, sliced and seeded
  • 4 teaspoons sour cream
  • Hot sauce, optional

Instructions

  1. Place the leftover meat in a small microwave-safe bowl and cover it with a slightly damp paper towel to help keep it moist. Place the broth or au jus in a separate microwave-safe bowl.
