Buckeye Brownies are fudgy brownies topped with a creamy peanut butter truffle layer for the ultimate indulgence. If you want an easy, crowd-pleasing dessert, these Buckeye Brownies are one of my all-time favorites.

BUCKEYE BROWNIES

After dinner I checked the fridge and found only crumbs left—clear proof these Buckeye Brownies are a hit. They combine simple ingredients with an impressive finish, making them ideal for potlucks, holidays, or an indulgent weeknight dessert.
INSTRUCTIONS
- Preheat the oven to 350°F. Grease the bottom only of a 13×9-inch baking dish with cooking spray or shortening. For easier slicing, line the pan with foil and grease only the foil on the bottom before adding batter.
- Prepare the boxed brownie mix in a large bowl according to the package directions, using the water, oil and eggs called for. Pour the batter into the prepared pan and spread into an even layer. Bake following package instructions. Cool completely, about 1 hour; you can speed this up in the refrigerator.
- For the filling, beat the filling ingredients in a medium bowl with a hand mixer on medium speed until smooth and evenly combined. Spread the peanut butter filling over the cooled brownie layer in an even layer.
- For the topping, combine chocolate chips and butter in a small microwave-safe bowl. Microwave uncovered on High for 30 to 60 seconds, then stir until the chocolate is smooth and glossy. Let cool about 10 minutes before spreading evenly over the peanut butter layer. Refrigerate about 30 minutes, or until the topping is set. Cut the brownies into 9 by 4 rows for 36 pieces, or into 16 larger squares for sharing. Store covered in the refrigerator; for best texture, remove 10–15 minutes before serving so the chocolate topping softens slightly.

NOTES
This recipe is inspired by a classic peanut butter truffle brownie and works well with a boxed brownie base for convenience. If you prefer a scratch brownie, use your favorite homemade fudgy brownie recipe and follow the same layering steps. For best results, use creamy peanut butter (not natural) for a stable texture in the filling. Store leftovers in an airtight container in the refrigerator and enjoy within several days.
