I learned how to make caramel corn from a dear friend and mentor from the church where I grew up. She and her family were farmers, and she was one of the kindest and most patient people I knew.

She taught me many useful skills, including how to can jelly, how to sew, and how to make delicious homemade recipes like biscuits and caramel popcorn. This recipe has stayed with me because it is easy, dependable, and always loved by anyone who tries it.

When it was time for my wedding, I knew I wanted to give this caramel corn as a party favor. My sweet friend made all of it, and we spent time visiting while we bagged and labeled around 200 little bags. The labels said, “Thanks for popping by!” It was a simple, personal, and memorable favor.

Since learning how to make homemade caramel corn, I have made this recipe many times and adjusted it slightly for a smooth, even caramel coating. I have also included high altitude tips below, because caramel can behave differently depending on where you live.

How to make caramel corn

  1. Pop the popcorn and remove any unpopped kernels. Divide the popcorn between two large rimmed baking sheets lined with parchment paper.
  2. Combine the butter, brown sugar, corn syrup, and salt in a saucepan. Heat until melted, stirring to combine.
  3. Once the mixture is combined and begins to boil, stop stirring. Let it boil for 5 minutes, then remove it from the heat and stir in the vanilla and baking soda.
  4. Pour the caramel over the popcorn and stir to coat. Bake for 1 hour, stirring every 15 minutes.
  5. Remove the caramel popcorn from the oven, let it cool, and enjoy.

High Altitude Adjustments

How to adjust caramel corn for high altitude

If you are making caramel corn at high altitude, reduce the boiling time by about 30 seconds for every 1,000 feet above sea level. For example, at close to 4,000 feet above sea level, the sugar mixture only needs to boil for about 3 minutes.

After 3 minutes, the caramel reached 241°F, which worked well for that altitude. If the boiling time is not reduced at high altitude, the caramel mixture may become thicker and grainier. This happens because water boils faster and at a lower temperature as altitude increases.

For the right caramel consistency at higher elevations, you generally need to either increase the liquid or reduce the cooking time. For this recipe, reducing the boiling time is the simplest adjustment.

Even if the caramel turns out a little grainy, the popcorn will still taste good. The adjustment simply helps create a smoother coating and a better final texture.

Do not miss these tips

Tip 1: Remove unpopped kernels before adding the caramel. Place a cooling rack over a baking sheet and pour the popcorn onto the rack. The unpopped kernels will fall through, leaving the popped popcorn on top.

Tip 2: Once the sugar, butter, corn syrup, and salt are melted and the mixture begins to boil, stop stirring. This helps prevent crystallization.

Tip 3: Stir the popcorn every 15 minutes while it bakes. This helps the caramel coat the popcorn evenly and gives the finished caramel corn its crisp texture.

Caramel Corn FAQs

Do you stir caramel while cooking?

No. Once the caramel mixture comes to a boil, stop stirring. Stirring can splash sugar onto the sides of the saucepan. If that sugar cools and crystallizes, it may cause the entire batch to become grainy.

Professional candy makers may use a pastry brush and water to wash down the sides of the pan, but for home cooking, the easiest method is to stop stirring as soon as the caramel starts to boil.

What temperature should the caramel reach?

After boiling for 5 minutes, the caramel should be around 245°F to 250°F. If you live at high altitude, follow the adjustment notes above and reduce the boiling time.

The caramel should not burn during this process. Sugar burns at a much higher temperature, and this caramel mixture should remain well below that point. A candy thermometer can be used if you want to check the temperature, but the 5-minute boiling time works well for standard altitude.

Why bake caramel corn?

Baking caramel corn helps the caramel set into a crisp, crunchy coating. The process of baking, stirring, and repeating for one hour gives the popcorn an even coating and the texture that makes homemade caramel popcorn so good.

This easy caramel popcorn recipe is sweet, crunchy, and satisfying. It is perfect for gifting, snacking, or serving to family and friends.

How do you keep caramel corn crisp?

Store caramel corn in an airtight container or sealed bag. Keeping air and moisture out helps the caramel coating stay crisp for longer.
