How to make BBQ Pulled Pork Baked Potato

Step one: Preheat the oven to 400°F (205°C). Wash the potatoes well and poke several holes in each with a fork. This allows steam to escape while baking.

Step two: Rub each potato with oil, then sprinkle with salt and pepper. Wrap each potato in foil or place them directly on a baking sheet if you prefer a crisper skin.

Step three: Bake for 50–60 minutes, depending on size, until the potatoes are tender when pierced with a fork. Larger russets may take up to an hour; medium potatoes will be done sooner.

Tip: To check doneness, insert a knife or skewer into the center — it should slide in easily.

Step four: While the potatoes bake, combine cooked, shredded pork with BBQ sauce to taste. Warm it gently on the stove or in a slow cooker until heated through.

Step five: Remove potatoes from the oven. Cut each lengthwise down the center, keeping the edges intact. Fluff the insides slightly with a fork, then top with shredded cheddar, a generous spoonful of pulled pork, a dollop of sour cream, and a sprinkle of chopped green onions.
