Keto Apple Pie

This crust is the base used for a keto apple pie recipe, and it works especially well when you want a pastry that can be rolled, shaped, and baked until crisp. A good low-carb pie crust should do more than simply hold the filling. It should add texture, flavor, and that familiar flaky pastry experience that makes a homemade pie feel complete.

As shown above, the pastry can be cut with slits and still keep its shape. That is one of the most useful features of this dairy-free keto pie crust. Low-carb dough can sometimes be fragile, but this version is designed to hold together well when rolled and transferred to a pie tin. The key is to work quickly, keep the dough cool, and allow enough time for it to rest before baking.

For the best golden color and crisp texture, brush the crust with egg wash before it goes into the oven. Egg wash is simply beaten egg, and it helps the surface brown beautifully as the pastry bakes. When baked for around 30 minutes, the crust develops a deep golden finish and a crisp edge. Always follow the instructions for the pie you are making, as baking time may vary depending on the filling and the size of your pie dish.

If you are making a completely dairy-free dessert, remember to choose dairy-free accompaniments as well. For example, coconut cream can be used in place of regular cream when serving your pie. The crust itself is rich, flaky, and flavorful, so it pairs nicely with fruit-style keto fillings, custard-style fillings, or other low-carb dessert ideas.

Dairy Free Keto Pie Crust

An easy low-carb pie crust does not need a long list of complicated ingredients. This recipe uses almond flour, coconut flour, xanthan gum, baking powder, salt, lard, and cold water to create a dough that can be chilled, rolled, and shaped. Almond flour gives the crust body and a mild nutty flavor, while coconut flour helps absorb moisture. Xanthan gum improves the structure, which is especially helpful because this keto pie crust contains no gluten.

The most important step is cutting the lard into the dry ingredients quickly. This creates small pockets of fat throughout the dough, which helps produce a flaky texture after baking. You can do this by hand with two forks or use a food processor for a faster method. Once the water is added and the dough comes together, it needs time in the fridge. Chilling helps the dough firm up, making it easier to roll and transfer into the pie dish.

This dairy-free keto pie crust is a great recipe to keep on hand for holidays, family dinners, and low-carb baking days. It is suitable for anyone looking for a gluten-free, low-carb pastry that does not rely on butter or cream. Serve it with your favorite keto-friendly filling and enjoy a homemade pie crust that tastes crisp, rich, and satisfying.

Calories: 207kcal
Author: FatForWeightLoss (Aaron Day)
Prep: 20 minutes
Cook: 30 minutes
Total: 1 hour 50 minutes

Serves 12 slices

Ingredients

  • 200 g almond flour (7 oz)
  • 60 g coconut flour (2 oz)
  • 1/2 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 120 g lard room temperature
  • 1/4 cup cold water

Instructions

  • In a large glass bowl, combine the almond flour, coconut flour, xanthan gum, baking powder, and salt. Mix well until the dry ingredients are evenly blended and no single ingredient is visibly separated.
  • Work quickly for the best texture. Spoon the lard into small pieces and add it to the dry mixture. Use two forks to press the lard into the flour mixture until it is distributed throughout. You can also use a food processor by pulsing the lard and dry ingredients on high for 20 to 30 seconds. Add the cold water and mix until the dough comes together.
  • Wrap the dough tightly in cling wrap and refrigerate for at least 1 hour. For easier handling and a better result, chilling for 2 hours is recommended.
  • When you are ready to bake, place the pastry between two sheets of parchment paper. Roll it out until it is large enough to extend about 5 cm or 2 inches beyond the edges of your pie tin.
  • Remove the top sheet of parchment paper. Place the pie dish upside down over the pastry, then carefully flip both the pastry and dish the right way up so the pastry sits inside the tin. This crust does not need to be blind baked before adding the filling.
