You only need a few basic ingredients to make this easy roast chicken rub recipe. Start with one 4 lb whole chicken. You will also need olive oil, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. For the cavity, use celery, lemon wedges, and butter. Minced garlic is added to the pan juices during roasting, giving the chicken even more flavor as it cooks.

  • Let the chicken sit at room temperature while you prepare the oven and ingredients. Preheat the oven to 425°F.
  • Remove the giblets and neck from the cavity. Pat the chicken completely dry with paper towels, inside and out. Dry skin helps the seasoning cling better and helps the chicken roast properly.
  • Coat the chicken with olive oil. Mix the dry rub ingredients in a small bowl, then reserve a small amount of seasoning for the cavity.
  • Season the cavity, then add the celery, lemon wedges, and sliced butter. If you want to add more flavor, fresh thyme, rosemary, sage, onions, or garlic can also be placed inside the cavity.
  • Tie the legs together with kitchen twine and tuck the wing tips underneath the chicken. Rub the remaining seasoning mixture all over the outside.
  • Grease the bottom of a heavy-bottom skillet and place the chicken in the skillet. Add sliced butter around the chicken.
  • Roast the chicken for 30 minutes. Add minced garlic to the pan juices, then baste the chicken with the buttery juices. Continue roasting and basting until the chicken is fully cooked.
  • The chicken is done when the thickest part of the thigh reaches 165°F. If you do not have a meat thermometer, pierce the thickest part of the thigh; the juices should run clear.
  • Transfer the chicken to a cutting board and let it rest for 10 to 15 minutes before carving. Resting helps the juices settle back into the meat.

Ingredients

  • 4 lb whole chicken
  • 2 tbsp olive oil
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 tbsp salt plus an additional 1/4 tsp
  • 1 1/4 tsp pepper
  • 1 celery stalk about 8 inches, cut crosswise into 6 equal pieces
  • 2 tsp minced garlic
  • 1 lemon cut into four wedges
  • 1/2 cup unsalted butter you will need 3/4 cup total

Instructions

  • Preheat the oven to 425°F. Remove the giblets and neck from the cavity. Pat the chicken completely dry with paper towels, inside and out. Coat the entire chicken with olive oil.
  • Add all of the seasonings to a small bowl. Reserve 2 teaspoons of the seasoning mixture for the cavity, then season the inside of the chicken with that portion.
  • Cut 4 tablespoons of butter into slices. Place the butter slices inside the cavity with the celery and lemon. Reserve the remaining butter for later.
  • Tie the legs together with twine and tuck the wing tips underneath the chicken. Rub the remaining seasoning all over the outside of the chicken.
  • Grease the bottom of a heavy-bottom skillet. Place the chicken in the skillet. Slice 4 tablespoons of butter and place the slices around the chicken.
  • Place the chicken in the preheated oven and roast for 30 minutes.
  • After 30 minutes, add the minced garlic to the pan juices. Melt the remaining 3 tablespoons of butter and use it with the pan juices to baste the chicken. Continue cooking for 45 minutes, basting every 15 minutes.
  • The chicken is done when the thickest part of the thigh reaches 165°F on a meat thermometer. You can also pierce the thickest part of the thigh with a knife; if the juices run clear, the chicken is done. Transfer the chicken to a cutting board and let it rest for 10 to 15 minutes before carving.

Notes

A 4 lb organic whole chicken works best for this recipe.

Season the outside of the chicken after tying the legs with kitchen string so the seasoning stays in place. Use about 2 teaspoons of the seasoning inside the cavity.

You can add extra ingredients to the cavity if you like, such as fresh thyme, rosemary, sage, onions, or garlic.

Roast the chicken for at least 30 minutes before you begin basting. After that, baste every 15 minutes for the best flavor and moisture.

If the skin starts to brown too quickly, loosely tent foil over the chicken while it finishes cooking.
