Ingredients
- 5 pounds chicken thighs boneless
- 3 tablespoons smoked paprika
- 1 ½ tablespoons oregano
- 2 tablespoons cumin
- 1 ½ teaspoon salt
- 15 cloves garlic minced
- 5 tablespoons parsley chopped
- ¼ cup olive oil
Garnish
- chopped parsley
- 1 lemon quartered, to finish
For the Garlic Aioli
- ½ cup mayonnaise
- 2 cloves garlic minced fine
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions

Remove the skin and excess fat from the chicken thighs, then place the chicken in a large bowl or shallow dish.

Combine the smoked paprika, oregano, cumin, salt, garlic, parsley, and olive oil. Rub the mixture all over the chicken. Cover and refrigerate for at least 3 hours, or preferably overnight.

Preheat the grill to medium-high heat, about 350°F to 375°F.

Grill the chicken for about 5 minutes on each side, keeping the lid closed when possible and watching for flare-ups.
