Turnip gratin is a rich, creamy, and flavorful low carb alternative to classic potato dauphinoise. Thinly sliced turnips are baked with cream, garlic butter, black pepper, salt, and warm nutmeg until tender and golden. If you have ever found turnip recipes a little bland, this comforting baked dish is a delicious way to enjoy them.

This low carb turnip gratin has all the comfort of a traditional creamy baked side dish without using potatoes. Turnips have a mild flavor that becomes soft and mellow when cooked, and they absorb seasoning beautifully. The nutmeg adds warmth, the cream gives the dish its classic richness, and the garlic butter on top brings everything together.
Serve turnip gratin hot from the oven as a side dish for roasts, grilled meats, fish, or poultry. It can also work as a cozy vegetarian main course when paired with a salad or simple vegetables.
What is Dauphinoise?
Dauphinoise, also known as gratin dauphinois, is a classic French dish made with thinly sliced potatoes baked in a creamy sauce. It comes from the Dauphiné region of southeastern France and is often served as a rich side dish. This recipe keeps the same comforting style but replaces potatoes with turnips to create a low carb version.
- Turnips are used instead of potatoes for a lower carb base.
- Cream helps bind the slices together and creates the smooth, rich sauce.
- Garlic adds depth and a gentle savory flavor.
- Butter is used to grease the dish and enrich the top layer.
- Seasonings such as salt, black pepper, and grated nutmeg bring out the best flavor in the turnips.

Are turnips low carb?
Although turnips grow below ground, they are much lower in carbs than potatoes. At about 4g net carbs per 100g serving, they make a useful low carb substitute when you want the texture of a root vegetable without using potato.
Turnips are often overlooked, but they are very versatile in low carb cooking. Their texture is satisfying, and when they are seasoned well, they become a wonderful base for creamy casseroles, fries, tarts, and gratins. In this recipe, the combination of cream, garlic, butter, and nutmeg transforms simple turnips into a comforting keto-friendly side dish.
Ingredients
You only need a few simple ingredients to make this creamy turnip gratin.

- Turnips – Choose fresh, firm turnips without blemishes. Small to medium turnips are usually less woody and have a milder flavor than larger ones.
- Butter – Unsalted butter works best so you can control the seasoning.
- Heavy cream – Double cream or whipping cream may be used.
- Nutmeg – A light sprinkle adds warmth. Adjust the amount to your taste.
- Garlic – One clove gives a gentle garlic flavor, but you can use more if you prefer a stronger taste.
- Salt and black pepper – Essential for bringing out the flavor of the turnips.
How to make low carb turnip gratin
This recipe is simple, but the flavor is layered and satisfying. Thin slices of turnip are seasoned with nutmeg, salt, and pepper, then baked in cream with garlic butter until tender. You could add Parmesan if you like, but try it without cheese first so the flavor of the turnips and nutmeg can shine.

Peel the turnips and slice them thinly and evenly.

Toss the slices with nutmeg, salt, and black pepper.

Mix the butter with finely chopped garlic.

Layer the turnips in a baking dish, add cream and water, dot with garlic butter, and bake.
Make turnip gratin dairy free
For a dairy free version, omit the cream and use coconut milk with nutritional yeast. You may want to adjust the seasoning to balance any coconut flavor.

Storage
After baking, allow the turnip gratin to cool to room temperature for about 1 to 2 hours. Do not leave it out for an extended period.
Transfer leftovers to an airtight container, or cover the baking dish well with plastic wrap or foil. Store in the refrigerator for up to 3 to 4 days.
Reheating
Reheat leftover turnip gratin in the oven at 325-350°F or 160-175°C until warmed through. Cover with foil if needed to prevent the top from browning too much.
Recipe Tips
- Slice the turnips into thin, even rounds so they cook at the same rate.
- A mandoline can help with consistent slices, but a sharp knife also works well.
- Parboiling the slices for a few minutes can reduce the baking time and help ensure tenderness.
- Use a wider, shallow baking dish for more surface browning. A deeper dish may need a longer bake.
- Taste and adjust the nutmeg to suit your preference.
