  • Add the onion, carrot, and red bell pepper to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables soften. Stir in the crushed tomatoes and smoked paprika. Bring to a boil, then simmer rapidly for about 10 minutes, or until the sauce thickens.
  • Meanwhile, salt the boiling water generously and cook the pasta according to the package directions. Before draining, reserve 3/4 to 1 cup of the pasta water.
  • Drain the pasta and add it to the sauce in the skillet. Toss to combine. If the sauce is too thick, add reserved pasta water a tablespoon at a time until it reaches the consistency you like.
  • Stir in the crisp pancetta and chopped parsley. Season with salt and pepper to taste. Serve warm, garnished with additional fresh parsley.
