Homemade Shamrock Shake: Creamy Mint Milkshake

It’s March, which for many means one thing: Shamrock Shake season. As soon as St. Patrick’s Day approaches, I start seeing McDonald’s signs everywhere advertising that their minty green shakes are back for a limited time.

Every time I pass a McDonald’s, the craving hits. The drive-thru lines are long and the thought of getting out into chilly weather just to sip a frosty milkshake makes me pause. So most days I drive on and think about that creamy minty flavor for the next hour.

The TV spots don’t help — they remind me nightly that the Shamrock Shake is only around for a short time. Eventually I decided to stop teasing myself and recreate the classic at home. Making a homemade Shamrock Shake is easy, fast, and lets you control how minty or rich you want it to be.

Homemade Shamrock Shake

I’ve made hundreds of milkshakes over the years. My favorites are mint chocolate chip and strawberry, but every March I find myself craving that iconic bright-green, mint-flavored shake. The base is simple: vanilla ice cream and milk. From there, a little peppermint extract gives the flavor and a few drops of green food coloring create the signature hue.

A pint of good-quality vanilla ice cream makes this recipe effortless—no measuring required for ice cream scoops.

I’m not trying to be health-conscious with this one — milkshakes are an indulgence — but if you prefer a lighter version, you can make a green smoothie that mimics some of the flavors without the richness. It won’t be the same as a classic Shamrock Shake, but it makes a tasty, healthier alternative when you want the mint and a green color without the heavy creaminess.

Making the shake at home means you can easily adapt it: use whole milk for a richer texture, reduced-fat milk for a lighter result, or even a plant-based milk if you need a dairy-free option. Adjust the peppermint extract to taste — start small, as extract can be strong — and add green food coloring a few drops at a time to reach the shade you prefer.

Blend until smooth, then top with whipped cream, sprinkles and a cherry for the full effect.

If you want to make the experience extra-special, serve in chilled glasses and leave room at the top for a generous swirl of whipped cream, colorful sprinkles, and a maraschino cherry. For a boozy adult twist, a splash of crème de menthe or a mint liqueur can be stirred in for extra depth — only add alcohol if serving to adults.

Once I started making them at home, the drive-thru lines didn’t bother me anymore. I can whip up two shakes in just a few minutes, customize the sweetness and mint level, and enjoy one right away without leaving the house. It’s an easy copycat that satisfies the craving whenever it strikes.

Shamrock Shake

shamrock shake

A classic green milkshake made with vanilla ice cream, milk and peppermint extract—perfect for St. Patrick’s Day or any time you want a minty treat.

Ingredients

  • 2 cups vanilla ice cream
  • 3/4 cup milk (whole milk preferred for a richer shake)
  • 10 drops green food coloring (adjust to desired color)
  • 1/4 teaspoon mint (peppermint) extract
  • Whipped cream, sprinkles and cherries for serving

Instructions

  1. In a blender, combine the vanilla ice cream, milk, green food coloring and peppermint extract.
  2. Blend until smooth and evenly colored. Taste and adjust extract or coloring if needed.
  3. Pour into two chilled glasses.
  4. Top with whipped cream, sprinkles and a maraschino cherry.
  5. Serve immediately and enjoy.

Notes

Start with a small amount of peppermint extract and add more to taste—it’s very concentrated. For a thicker shake, use less milk; for a thinner shake, add a bit more. To make a dairy-free version, substitute plant-based ice cream and milk.
