My children adore pancakes, waffles, French toast, and crepes topped with warm strawberry sauce — a family favorite they inherited from their Papa Loren. I made a fresh batch this weekend and they couldn’t get enough. This strawberry sauce is quick to prepare, bright and fruity, and it elevates breakfast and dessert alike. It’s especially lovely spooned over ice cream, stirred into yogurt, or used as a topping for cakes and cheesecakes.

Ingredients:

  • ¼ cup water
  • ¼ cup sugar (use less if the berries are very sweet)
  • 1 tbsp cornstarch
  • Zest and juice from ½ a small lemon
  • 16 oz fresh strawberries, cleaned, hulled, and quartered

How to Make Strawberry Sauce

Begin by combining the water, sugar, cornstarch, and the lemon zest and juice in a medium saucepan. Whisk the mixture over medium heat until the cornstarch is fully dissolved and the liquid is smooth. This creates the base that will thicken as the strawberries cook.

Add the quartered strawberries to the pan and stir frequently. Use the back of a spoon or a potato masher to gently crush some of the berries while leaving others intact for texture. Let the mixture simmer for about 5–7 minutes until the berries release their juices and the sauce becomes glossy and slightly thickened. If you prefer a thinner sauce, cook for a shorter time; for a jam-like consistency, simmer a little longer.

Remove the pan from the heat and allow the sauce to cool for a few minutes before serving. Cooling helps it thicken further as it settles. Serve it warm over pancakes, waffles, French toast, crepes, or vanilla ice cream. Leftovers keep well in an airtight container in the refrigerator for up to a week and can be reheated gently on the stove or in the microwave.

  • Frozen strawberries can be used in a pinch; increase cook time slightly to break down the fruit and evaporate excess liquid.
  • This sauce freezes well in portions. Thaw in the refrigerator and reheat gently before serving.
