It uses pantry staples and a few fresh vegetables, and comes together in minutes without any elaborate dressing.

How to make Chickpea Lentil Salad

Ingredients

  • 1 15 oz can chickpeas, drained and rinsed
  • 1 15 oz can lentils, drained rinsed
  • 1 cucumber, seeded and chopped
  • 1 tomato, seeded and chopped
  • 1/4 small red cabbage , shredded
  • 2 green onion, finely chopped
  • 1 tablespoon chopped fresh mint or 3 tablespoon fresh parsley
  • 2/3 cup crumbled goat cheese or feta cheese
  • zest of 1 lemon
  • 3 tablespoon lemon juice
  • 2-3 tablespoon olive oil
  • salt and pepper , to taste

Instructions

  • In a large mixing bowl, combine all ingredients and toss gently to coat with lemon zest, lemon juice and olive oil. Season with salt and pepper to taste. Serve immediately or chill before serving for a cooler, crisper salad.

Notes

To prepare ahead, combine all ingredients except lemon zest, lemon juice, salt and pepper. Keep chilled and add the lemon and seasoning just before serving to maintain freshness and texture.
