  • 375 grams (3 cups) cake flour or pastry flour (8–9% protein)
  • 15 grams (1 tablespoon) baking powder
  • 3/4 teaspoon kosher salt
  • 333 grams (1 2/3 cups) granulated sugar
  • 3 large egg whites, room temperature
  • 2 large eggs, room temperature
  • 113 grams (½ cup) unsalted European-style butter (82% butterfat), melted and cooled
  • 112 grams (½ cup) sunflower oil
  • 240 grams (1 cup) whole milk
  • 1.5 tablespoons vanilla bean paste or the seeds from 2 vanilla pods

Instructions

Vanilla Syrup

  • Combine the sugar and water in a small saucepan and heat over medium until the sugar dissolves. Remove from heat, stir in the vanilla, transfer to a heatproof container, and let cool.

Vanilla Bean Cake

  • Preheat the oven to 325°F (160°C) or 140°C fan (convection). Prepare two 9-inch cake pans with baking spray or butter and flour, and line the bottoms with parchment.
  • Warm the milk in a small saucepan until steaming. Remove from heat, stir in the vanilla bean paste or scraped vanilla seeds, and set aside to cool to room temperature.
  • Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
  • In a stand mixer with the whisk attachment or with a hand mixer, beat the eggs and sugar until thick, doubled in volume, and pale—about 2 minutes. The batter should form ribbons when lifted.
  • Mix in the cooled melted butter, then the oil, scraping the bowl to ensure even distribution.
  • Add one-third of the flour mixture and mix briefly, then add one-third of the vanilla milk and mix. Repeat, alternating flour and milk in thirds, mixing gently to form a smooth batter without overmixing.
  • Divide batter evenly between the prepared pans. Weigh the filled pans if desired for exact equality and tap gently to release large air bubbles.
  • Bake on the middle rack for 38–40 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cakes should pull slightly away from the sides and spring back when touched.
  • Cool cakes on a wire rack. While still warm, brush the tops generously with the cooled vanilla syrup using a pastry brush.
  • Once completely cool, invert layers onto a wire rack, remove parchment, and set right side up. Optional: wrap cooled layers tightly and refrigerate for a couple of hours or overnight to let the syrup absorb fully and to make layering and frosting easier.

Vanilla Swiss Meringue Buttercream

  • Prepare one batch of vanilla Swiss meringue buttercream while the cake layers cool. Use the frosting to fill and cover the cake as described below.

Assemble the Cake

  • Level the tops of the cake layers if necessary. These layers should be fairly flat; a slight dome is normal and can be left when stacking.
  • Place one layer on a serving plate and spread an even layer of buttercream. Add the second layer, placing it top side down if you prefer a perfectly flat top.
  • Cover the top and sides with buttercream and smooth with an offset spatula. Slice and serve at room temperature for best texture and flavor.
