Note: If you prefer to use this sauce as a dipping sauce, it benefits from a short simmer to let the flavors meld. For grilled ribs, you don’t need to pre-cook the sauce since it caramelizes directly on the grill.

For the BBQ Sauce
  1. 6 oz tomato paste
  2. 1/4 cup balsamic vinegar
  3. 2 cloves garlic, minced
  4. 1 tbsp yellow mustard
  5. 1 tbsp coconut aminos
  6. 2 tbsp distilled white vinegar (apple cider vinegar works too)
  7. 1/2 tsp smoked paprika
  8. Kosher salt, to taste
  9. Black pepper, to taste
For the Ribs
  1. 1 rack baby back ribs
  2. Kosher salt, to taste
  3. Black pepper, to taste
  4. 1 tbsp paprika
  5. 1 tsp garlic powder
  6. 1 tsp onion powder
  7. 1 tbsp ground cumin
  8. Aluminum foil
Instructions
  1. Preheat your oven to 275°F (135°C).
  2. Place the ribs meat-side down and use a paring knife to loosen an edge of the membrane. Grip the membrane with a paper towel and peel it away slowly until removed.
  3. Combine the seasonings (paprika, garlic powder, onion powder, and cumin) in a bowl and mix thoroughly. Set aside the salt and pepper for final seasoning.
  4. Season the entire rack with kosher salt and black pepper to your taste. Rub the spice mixture evenly over the ribs so they are fully coated.
  5. Wrap the rack tightly in aluminum foil and place it on a baking sheet. Bake for 2 to 2.5 hours, depending on rib thickness, until the meat is tender and easily pulls away from the bone.
  6. While the ribs are in the oven, prepare the BBQ sauce. Combine all sauce ingredients in a blender or food processor and blend until smooth. Set aside. If you plan to use the sauce for dipping, simmer it gently for about 10 minutes to meld flavors and thin with a little stock if desired.
  7. Remove the ribs from the oven and open the foil. Brush the ribs generously with the BBQ sauce. Finish the ribs on a preheated grill over high heat for about 5 minutes per side, or until the sauce caramelizes and develops a slight char. Watch closely to avoid burning.
  8. Brush once more with sauce before serving, slice into portions, and enjoy.
