Authentic West African Jollof Rice Recipe

Jollof rice is a richly flavored West African rice dish enjoyed across the region. Nigerian and Ghanaian styles share many similarities, differing mainly in small seasoning choices and technique. Why roast vegetables

A defining characteristic of great jollof rice is a subtle smokiness. Type of rice to use in jollof rice

This recipe uses basmati rice because of its fragrant aroma and the way it separates when cooked. You can substitute jasmine or another long-grain rice if you prefer; the overall flavor will remain similar. The main difference is texture: different rices absorb water differently, so you may need to adjust the water slightly. Basmati often absorbs more water than jasmine, so follow the suggested range and adjust to your rice choice.

Step 1 — Roast the vegetables

Roast peppers, onions, and garlic under the broiler until they develop a good char. This concentrated, slightly smoky flavor becomes the foundation of the dish.

Step 2 — Blend the tomato base

Combine the roasted vegetables with canned whole tomatoes in a blender and purée until smooth to create the tomato-vegetable base.

Step 3 — Brown the onions

Sauté diced onions in hot oil until deep golden. Browning the onions releases natural sugars and oils that contribute savory depth to the finished rice.

Step 4 — Cook the tomato mixture

Add tomato paste, cook briefly, then stir in the blended vegetable-tomato mixture. Cover and simmer to develop flavor for about 10 minutes.

Step 5 — Season and add liquid

After simmering, season the sauce. Key seasonings in this version include chicken bouillon powder, thyme, garlic and onion powders, smoked paprika, turmeric, white pepper, and salt. Add hot water to reach the proper volume for cooking the rice.

Stir in the washed rice, cover the pot tightly with tin foil and the lid, then cook on low heat for about 20 minutes or until the rice is tender and the liquid has been absorbed. Sealing the pot minimizes steam loss and helps the rice cook evenly.

Why canned tomatoes and not fresh tomatoes?

Canned whole tomatoes provide consistent acidity and sweetness from batch to batch, making the recipe easier to reproduce. Fresh tomatoes vary considerably by variety and ripeness, which can change the final flavor. If you prefer fresh tomatoes, you can roast and purée them instead; just be aware that the flavor and water content may alter the balance and cooking time.

Jollof rice is deeply flavorful and pairs well with chicken, fish, or roasted vegetables. It makes great leftovers and reheats well.

Ingredients

Roasted vegetables base

  • 1 large red bell pepper
  • 1 yellow onion
  • 2 scotch bonnet peppers (adjust to taste)
  • 10 cloves garlic
  • 400 ml canned whole tomatoes

For the pan

  • ⅓ cup oil
  • 1 yellow onion, sliced or diced
  • 3 tbsp tomato paste
  • Roasted vegetable base (from above)
  • 1 tbsp chicken bouillon powder
  • 1 tbsp dried thyme
  • ½ tbsp salt (adjust to taste)
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • ½ tbsp smoked paprika
  • 1 tsp turmeric powder
  • 1 tsp white pepper
  • 3 cups washed basmati rice
  • 2¼–2½ cups hot water

Instructions

  1. Preheat your oven to the broiler setting. Place the whole red bell pepper, the onion, scotch bonnet peppers, and garlic cloves on a baking sheet. Broil for about 8–12 minutes, turning if necessary, until the vegetables are nicely browned and blistered.
  2. Transfer the roasted vegetables to a blender, add the canned whole tomatoes, and blend to a smooth purée. Set this tomato-vegetable base aside.
  3. Heat ⅓ cup of oil in a large, heavy-bottomed pan over medium-high heat. Add the diced or sliced onion and cook, stirring occasionally, until the onion turns deep golden brown. This may take several minutes but is important for flavor.
  4. Add the tomato paste to the browned onions and stir for about 30 seconds to bloom the paste and remove any raw taste.
  5. Pour in the blended vegetable-tomato mixture, stir to combine, then cover and simmer on medium heat for 10 minutes to concentrate the flavors.
  6. After simmering, season the sauce with chicken bouillon powder, dried thyme, salt, garlic powder, onion powder, smoked paprika, turmeric, and white pepper. Stir well to distribute the seasonings evenly.
  7. Add the washed basmati rice to the pan and pour in 2¼ to 2½ cups of hot water. Stir gently to make sure the rice is evenly distributed in the sauce and submerged in liquid.
  8. Cover the pan tightly with a sheet of tin foil (to seal gaps) and place the lid on top. Reduce the heat to low and cook undisturbed for 20 minutes, or until the rice is tender and the liquid is absorbed.
  9. When the rice is done, remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork and taste for seasoning adjustments. Serve hot with your choice of protein or vegetables.
