Ingredients

For the full recipe and step‑by‑step instructions, see the recipe card below.

  • Whole wheat pastry flour: Keeps the crust tender while adding whole‑grain nutrition. All‑purpose flour or regular whole wheat can be substituted if needed.
  • Cold salted butter: Chilled butter pieces create flaky layers in the crust.
  • Salt: Balances sweetness and enhances buttery flavor.
  • Milk: Helps bind the dough.
  • Maple syrup: A small amount adds gentle sweetness.
  • Ice cold water: Keeps the dough cold so the crust stays flaky.
  • Optional for top crust: Egg wash (egg + water) for shine, and sanding or turbinado sugar for sparkle.

Pie Filling Ingredients

  • Apples: Use firm, crisp apples such as Honeycrisp, Cortland, or Granny Smith. Choose apples that hold their shape when baked.
  • Brown sugar: This recipe uses less sugar than many traditional pies; maple syrup can also be used but may take longer to thicken.
  • Vanilla extract: Adds warm depth to the filling.
  • Lemon juice: Adds brightness and helps prevent browning.
  • Cinnamon + nutmeg: Essential warm spices for apple pie.
  • Cornstarch: Thickens the juices so the filling is pleasantly gooey.

Recipe Tips

Tips For Success

  • Prevent over‑browning: Bake the pie on a lower rack and avoid rolling the edge crust too thin. If the edges brown too quickly, shield them with foil during the bake.
  • Keep ingredients cold: Cold butter and ice water help create a flaky crust.
  • Chill the dough: Refrigerating the dough disks reduces shrinkage and produces a more tender crust.
  • Egg wash is optional but recommended: Brushing the top crust with egg + water and adding a sprinkle of coarse sugar gives a nice golden sheen and a hint of sweetness.
