Ingredients

  • 1 1/2 cups mashed ripe bananas (about 4–5 medium bananas)
  • 1 cup coconut flour
  • 1/2 cup applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup seed butter (sunflower seed butter recommended) or nut butter if tolerated
  • 1/4 cup honey or maple syrup
  • 1 tablespoon pumpkin spice (or a mix of cinnamon, nutmeg, cloves)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips (optional; choose dairy-free chips if needed)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas until smooth and measure out 1 1/2 cups.
  3. Add the applesauce, melted coconut oil, seed butter, honey or maple syrup, pumpkin spice, vanilla extract, and salt to the mashed bananas. Mix until well combined.
  4. In a separate bowl, whisk together the coconut flour, baking powder, and baking soda.
  5. Slowly add the dry ingredients to the wet mixture, stirring until evenly combined. Coconut flour absorbs a lot of moisture, so the batter will thicken quickly.
  6. If using, fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45–60 minutes, or until a toothpick inserted into the center comes out clean. Baking time can vary depending on your oven and pan size.
  8. Allow the bread to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Refrigerate the loaf after it cools to extend freshness. Because this bread relies on ripe bananas and coconut flour, it may darken slightly as it rests — that’s normal and does not affect flavor. If you prefer a sweeter loaf, increase the honey or maple syrup to taste. For a nut-free option, stick with seed butter (such as sunflower seed butter).
