I want my words to touch lives, even in small ways. As we move into this new year, I’m grateful for the opportunity to do just that. As a food blogger, my daily concerns are about new recipes to share on Dish by Dish, about flavor combinations, seasonal produce, and how to present a meal that delights the senses. I’m not struggling to feed myself; even when I grumble about rising prices at the market, I still have choices at the grocery store.

Yet not everyone is so fortunate. Recently Nicole from Eat This Poem, who founded The Giving Table, announced a campaign to focus on feeding children in South Africa and encouraged food bloggers to donate a blog post to spread the word. I welcomed the chance to contribute because it aligned with my goal: using my writing to make a difference.

Learning about The Lunchbox Fund and the scale of childhood hunger in South Africa was alarming.

The statistics are a sobering reminder that many children go to school without reliable access to food. For some, a school lunch is the only meal they will get that day. Hunger undermines concentration, drains energy, and robs children of the chance to reach their potential. When children are also coping with trauma or the loss of parents, their attendance and learning suffer even more.

This reality is very different from my own, yet it exists for so many young people. I am grateful I’ve never had to face it, and deeply saddened that it is the daily experience for others. As a food blogger I cook, photograph, and write about food almost every day. It’s hard to imagine concentrating on algebra or reading when your stomach is empty and all you can think about is the next meal.

The Lunchbox Fund’s motto—“Feed a child. Nourish a mind.”—says it plainly. The fund grew from seeing children who sat apart from their classmates because they had no lunch and did not want to be tempted. Watching a child choose to sit alone is heartbreaking; imagining the impact of regular, nutritious school meals on a child’s ability to learn and participate is powerful.

Imagine a single hungry child walking to school, unable to focus because their stomach hurts. How can that child memorize multiplication tables or learn the words for future opportunities if hunger overwhelms their attention? The Lunchbox Fund aims to provide daily meals so children can focus on learning and planning for their futures.

The fund’s goal in the campaign I joined is to raise money to provide daily meals for a group of schoolchildren for an entire year. I’m proud to be part of this collective effort to ease hunger and support education—one child at a time.

According to The Lunchbox Fund, modest donations go a long way: $0.25 can feed a child for a day, $10 can feed a child for a month, and $120 can feed a child for a school year. Those figures highlight how a small contribution can have a large, lasting impact on a child’s ability to learn and thrive.

Feed a Child, Nourish a Mind

CURRIED CAULIFLOWER RICE

Serves 2

Ingredients:

  • 1 large head of cauliflower
  • 2 large garlic cloves, minced
  • 1 tablespoon curry powder (adjust to taste)
  • ½ cup chopped fresh parsley

Steps:

  1. Remove the leaves and core from the cauliflower and cut it into small florets.
  2. Pulse the florets in a food processor in small batches until the texture resembles couscous or rice.
  3. Heat a little oil in a large wok over low heat. Add the minced garlic and swirl for about 30 seconds until fragrant and just turning golden.
  4. Add the cauliflower “rice” and stir-fry for about five minutes, stirring occasionally to prevent sticking or burning.
  5. When the cauliflower is mostly cooked, sprinkle the curry powder over it and mix thoroughly so the grains turn a bright yellow and the flavor is evenly distributed.
  6. Finish by stirring in the chopped parsley and serve immediately.

This curried cauliflower rice is a quick, inexpensive, and tasty meal. It’s perfect as a light lunch or a side dish and showcases how simple ingredients can be transformed into something satisfying and vibrant.
