Welcome back! I’m excited to share one of my favorite dessert finds from a Secret Recipe Club assignment. For this round I was assigned a blog called Oreo’s and Cool Whip: Things I Make (For Dinner). After browsing the site I made a list of several tempting recipes but ultimately chose the fudgy brownies because they sounded irresistible and were adapted from Everyday Food (2005).

I usually agonize over my selection and make a short list of options. This time the contenders included Cheesy Bacon-Onion Pinwheels, Buffalo Chicken Lasagna, Margarita Donuts, and a Lemon-Scented Pull Apart Coffee Cake. In the end the fudgy brownies won — simple, classic, and exactly what I wanted to bake.

I made one very small change: I added a full cup of semi-sweet chocolate chips to the batter. I had them on hand and wanted extra chocolate pockets throughout the brownies. That tiny tweak made these brownies even more addictive.

The results were fantastic. The brownies baked up with a deep, rich chocolate flavor and a lovely fudgy texture. They are moist and soft but hold together nicely when cut. The chopped pecans add a pleasant crunch, and the melted chocolate chips create little streaks of gooey chocolate in each bite. These brownies are easy to make, satisfyingly chocolatey, and perfect for sharing or keeping all to yourself.

Ingredients

  • 1/2 cup unsalted butter
  • 8 oz semi-sweet chocolate, chopped
  • 1 1/4 cup granulated sugar
  • 3/4 teaspoon salt
  • 3 eggs
  • 3/4 cup all-purpose flour
  • 1 cup pecans, chopped
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Line an 8-inch square baking pan with parchment paper or foil. Lightly grease the paper or foil with cooking spray or a little butter. Preheat the oven to 350°F (175°C).
  2. In a heatproof bowl set over a pot of simmering water (or use a double boiler), melt the chopped semi-sweet chocolate and the unsalted butter together, stirring often until smooth and combined. Remove from heat.
  3. Stir the granulated sugar and salt into the melted chocolate mixture until well combined.
  4. Add the eggs one at a time, beating or stirring well after each addition so the mixture becomes glossy and uniform.
  5. Fold in the flour just until the batter is moistened — avoid overmixing. Gently fold in the chopped pecans and the cup of semi-sweet chocolate chips so they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared pan and smooth the top with a spatula. Bake in the preheated oven for about 40–45 minutes. A toothpick inserted into the center should come out with a few moist crumbs but not wet batter; the brownies will continue to set as they cool.
  7. Allow the brownies to cool completely on a wire rack before lifting them from the pan and cutting into squares.

Notes & Tips

These brownies are best when cooled so the texture firms up and slices cleanly. For a slightly gooier center, reduce baking time by a few minutes, checking early. If you prefer a crisper top, let them cool in the pan for a short while before transferring to a rack. Toasting the pecans lightly in a dry skillet for a few minutes before chopping enhances their flavor.

Store cooled brownies in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly and refrigerate for up to a week, or freeze individual squares for up to 2 months — thaw at room temperature before serving.
