Ingredients

For the Grilled Hoisin Chicken Wraps

  • 4 boneless, skinless chicken breasts, 4 to 6 ounces each
  • cup plus 2 tablespoons hoisin sauce
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • cup mayonnaise
  • 4 large whole wheat sandwich wraps or tortillas
  • 1 mango, sliced
  • 4 handfuls baby spinach, about one 7-ounce bag

For the Asian Triple Bean Salad

  • 1 pound green beans, trimmed and cut in half
  • 2 cups shelled edamame
  • 1 15-ounce can black beans, rinsed and drained
  • 4 scallions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon brown sugar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

Make the Grilled Hoisin Chicken Wraps

  1. Heat a grill to medium-high heat. In a small bowl, stir together ⅓ cup hoisin sauce, honey, and soy sauce. Set the mixture aside.
  2. Grill the chicken for 4 to 5 minutes. Turn the chicken over, brush it with the hoisin mixture, and continue grilling for another 4 to 5 minutes, or until the chicken reaches an internal temperature of 165 degrees. Turn once more and brush with additional hoisin mixture.
  3. Transfer the chicken to a cutting board. Let it cool, then slice it into pieces suitable for wraps.
  4. In a small bowl, combine the remaining 2 tablespoons hoisin sauce with the mayonnaise. This creates a simple creamy spread for the wraps.
  5. To assemble, place one tortilla on a cutting board. Spread the bottom half with a generous tablespoon of hoisin mayonnaise. Add a handful of baby spinach, one quarter of the sliced chicken, and a few slices of mango.
