  • salt and pepper, to taste
  • 24 very thin cucumber slices

  • 8 slices very thin bread wheat bread was used
  • 6 ounces smoked salmon
  • cream cheese
  • dill
  • cup sprouts

For the Cucumber Sandwiches

  • 8 slices very thin bread white and wheat bread were used
  • cream cheese
  • dill
  • 24 very thin cucumber slices

Instructions

For the Egg Salad Sandwiches

  • Chop the hard-boiled eggs and mash them with a potato masher, or grate them with a cheese grater for a finer texture. Stir in the mayonnaise, mustard, lemon juice, and paprika. Season with salt and pepper to taste.
  • Divide the egg salad evenly over 4 slices of bread. Add a thin layer of cucumber slices, then top with the remaining bread. Trim away the crusts and cut the sandwiches into your preferred shapes.

For the Smoked Salmon Sandwiches

  • Spread a thin layer of cream cheese on one side of each slice of bread. Sprinkle with dill. Add smoked salmon to 4 slices of bread, then top with sprouts. Place the remaining bread slices on top, trim the crusts, and cut into neat pieces.
