It took three attempts to get this recipe right. The buns had to pass three important tests: shape, taste, and texture. A good low-carb burger bun should not fall apart, taste overly eggy or sour, or feel dense and heavy. After a few adjustments, this version finally delivered the result I wanted: a savory keto bun that holds together well and makes a burger feel like a proper burger.

One of the biggest challenges for anyone following a keto diet is finding a good substitute for bread. While it is certainly possible to live without bread, most burger lovers will agree that a burger without a bun feels incomplete. Shape: To make these buns, I used a large four-hole Yorkshire pudding tin. It creates buns that are wide enough for burgers and gives them a neat, round shape. If you do not have that type of tin, you can also use a large pastry cutter lined with parchment paper. The edges may come out a little wrinkled, but the buns will still work.
Taste: The goal was to create a low-carb burger bun that did not taste strongly of any single ingredient. Almond flour can sometimes taste too nutty, and too much vinegar can make a bun taste sour. This version is balanced, allowing the burger to remain the star of the meal. If you enjoy chorizo, I highly recommend adding it. It gives the bun a deeper savory flavor without overwhelming the burger.
Sponginess: Getting a soft, spongy texture with almond flour can be challenging. The correct balance of eggs, almond flour, coconut flour, and flax meal helps give the dough enough structure and lift. The result is a bun that is firm enough to hold fillings but still soft enough to enjoy as bread.
For serving, I like to build a full keto burger with homemade coleslaw, a juicy beef patty, a slice of red onion, and a fried egg on top. It can be messy once the yolk breaks, but that is part of what makes it so good. These buns make the meal feel much closer to a traditional burger while still keeping it low-carb and gluten-free.

Description

Ingredients
- 1 ½ cups blanched almond flour
- 1 Tbsp coconut flour
- 1 Tbsp flax meal
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp real salt
- 5 large whole eggs
- 1 Tbsp apple cider vinegar
- ½ cup diced chorizo, optional
- 1 Tbsp sesame seeds, for topping
Instructions
- Heat the oven to 350 F (180 C). Grease a large Yorkshire pudding tin or prepare large pastry rings lined with parchment paper.
- In a large bowl, mix the almond flour, coconut flour, flax meal, baking powder, baking soda, and salt until evenly combined.
- Add the eggs and apple cider vinegar. Mix until a thick, even batter forms.
- Fold in the diced chorizo, if using, making sure it is evenly distributed throughout the batter.
- Spoon the batter into the prepared tin, being careful not to overfill each section.
- Sprinkle sesame seeds over the tops of the buns.
- Bake for 20 to 25 minutes, or until the buns are risen and a skewer inserted into the center comes out clean.

Notes
