Ingredients

Red Bean & Pomegranate Salad

  • 3 giant handfuls of kale, shredded
  • 1 1/2 cups carrots, shredded
  • 1 1/2 cups red cabbage, shredded
  • 1/3 cup diced red onion
  • 1/3 cup pomegranate seeds, or raisins
  • 1/4 cup fresh parsley, minced
  • 1 15 oz. can Eden Foods Small Red Beans, drained and rinsed
  • Hemp hearts, for garnish

Yogurt Tahini Dressing

  • 2 TBSP rice vinegar
  • 1/2 cup unsweetened almond or coconut milk yogurt
  • 1/2 TBSP tahini
  • 2 tsp Tamari lite
  • 1 TBSP fresh squeezed lemon juice
  • 1 tsp maple syrup, optional

Instructions

  1. Make the dressing first. Add the rice vinegar, unsweetened almond or coconut milk yogurt, tahini, tamari, lemon juice, and maple syrup, if using, to a small mixing bowl. Whisk until the dressing is smooth, creamy, and well combined. Taste and adjust with a little extra maple syrup if you prefer a sweeter dressing. Refrigerate until ready to use.
  2. Wash, chop, and shred the kale, carrots, red cabbage, red onion, and parsley. If using a whole pomegranate, remove the seeds. Drain and rinse the red beans well.
  3. Add the shredded kale, carrots, red cabbage, red onion, pomegranate seeds, parsley, and red beans to a large mixing bowl. Toss until the ingredients are evenly distributed.
  4. Pour the yogurt tahini dressing over the salad and toss until the vegetables and beans are lightly coated. Let the salad sit for about 5 minutes before serving so the dressing can slightly soften the kale.
  5. Serve with extra fresh parsley and a sprinkle of hemp hearts.
