  • 1 (6–8 oz) sushi-grade ahi tuna steak
  • 1/2 tablespoon olive oil
  • 2 teaspoons five-spice powder
  • 1 teaspoon chili powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Sesame seeds, for coating
  • Your favorite mixed greens (mixed baby kale greens recommended)
  • 2 radishes, thinly sliced
  • 1/3 English cucumber, thinly sliced
  • 2 scallions, thinly sliced

For the dressing:

  • 1/2 teaspoon wasabi paste (adjust to taste)
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 3 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper, to taste

Instructions

Seared Ahi Tuna

  1. Heat a cast-iron or nonstick skillet over high heat until very hot.
  2. Brush the tuna steak on both sides with olive oil. Season evenly with five-spice powder, chili powder, salt, and pepper. Sprinkle sesame seeds over the surface and press gently so they adhere.
  3. When the skillet is smoking hot, sear the tuna for about 1–2 minutes per side, depending on thickness and how rare you prefer the center. Remove to a cutting board.
  4. Let the tuna rest for a minute, then slice thinly on the bias.

Dressing and Assembly

  1. Whisk together the wasabi paste, rice vinegar, soy sauce, and olive oil until emulsified. Season with salt and pepper to taste.
  2. Toss some of the dressing with the mixed greens, radish, and cucumber to lightly coat.
  3. Divide the dressed greens between plates, arrange sliced tuna on top, and drizzle with additional dressing. Sprinkle with sliced scallions and serve immediately.
