Crockpot stuffed pepper soup

My family loves stuffed bell peppers as a simple, comforting weeknight meal. This Crockpot Stuffed Pepper Soup keeps all the classic flavors of stuffed peppers but turns them into an effortless, hands-off soup that fills the house with an irresistible aroma while it cooks.

How to Make Crockpot Stuffed Pepper Soup

Crockpot, canned tomatoes, rice, and more

The only real prep is browning the ground beef; if you like, you can brown the meat ahead of time or use a leaner alternative. For an even more hands-off approach, some slow cooker methods allow you to brown meat directly in the crockpot before continuing with the rest of the ingredients.

To prepare, place all ingredients except the rice into the crockpot. Cook on low for 6–8 hours so the flavors meld and the peppers soften. About 30 minutes before serving, stir in the cooked rice and recover to finish cooking. This keeps the rice from becoming mushy while still warming it through.

When the soup is done, the entire house smells amazing. It’s hearty, filling, and great for serving a crowd or for leftovers the next day. The texture is comforting and the tomato-based broth balances nicely with the savory beef and sweet bell peppers.

What size Crockpot?

I recommend using a 5-quart crockpot or larger for this recipe so everything fits comfortably. A larger slow cooker also helps ensure even cooking for soups and stews.

Gluten Free

This soup is naturally gluten free when you use gluten-free beef broth and check other canned ingredients for hidden gluten. Always verify labels if you need to avoid gluten, especially with broth or seasoning blends.

Storing Leftovers

Store leftovers in an airtight container in the refrigerator for 4–5 days. Reheat gently on the stovetop over medium-low heat or in the microwave until warmed through. If the soup thickens in the fridge, add a splash of broth or water when reheating to reach the desired consistency.
