A cozy Mediterranean-inspired sheet pan dinner made with sausage, chickpeas, halloumi, sun-dried tomatoes, fresh tomatoes, and spinach. It is easy, flavorful, and ideal for busy weeknights.

Ingredients

  • 2 cans chickpeas rinsed and dried
  • 12 oz sausage any kind or flavor, sliced
  • 1/2 lb halloumi cheese
  • 8 oz whole sun-dried tomatoes
  • 2 tbsp sun-dried tomato sauce or preserves
  • 3-5 tomatoes sliced into wedges
  • 2 cups fresh spinach
  • 1 tsp sea salt and pepper
  • 1 tsp each oregano and paprika
  • 3 tbsp olive oil
  • 1/2 cup artichokes optional

Instructions

  • Slice the fresh tomatoes into wedges and place them on a large sheet pan. Toss with 1 tablespoon olive oil, salt, and pepper. Roast at 425°F for about 20 minutes, until soft, juicy, and lightly caramelized.

  • While the tomatoes roast, add the chickpeas to a bowl. Toss them with the remaining olive oil, salt, pepper, oregano, paprika, and two tablespoons of sun-dried tomato sauce or preserves.
  • Remove the sheet pan from the oven. Add the seasoned chickpeas, whole sun-dried tomatoes, sliced sausage, and cubed or sliced halloumi cheese. Spread everything into an even layer so it can brown properly.

  • Switch the oven to broil and return the pan to the oven for 8-10 minutes, or until the halloumi is golden at the edges and the chickpeas are heated through.
  • Remove the pan from the oven and gently fold in the fresh spinach. The residual heat will wilt it just enough.

  • Serve warm with olives or artichokes, if using, and plenty of pita or crusty bread to soak up the juices. Finish with an extra drizzle of olive oil before serving.

Reheating Instructions

Oven:
For the best texture, spread leftovers on a sheet pan and reheat at 375°F for 8-10 minutes, until warmed through and the halloumi softens again.

Stovetop:
Reheat gently in a skillet over medium heat with a small drizzle of olive oil.

Microwave:
Reheat in short intervals, stirring between each one. The halloumi will be softer, but the dish will still taste delicious.
