Vegan Musubi Recipe with Teriyaki Tofu

I took the idea from classic Spam musubi and kept the preparation very similar. Instead of using meat, tofu becomes the main protein. Ingredients

  • 1 box of firm tofu
  • 1 jar of plant-based vegan egg alternative, such as Just Egg
  • 3 cups cooked rice, preferably short-grain or sushi-grade rice
  • 6 half-sheets nori
  • 1/2 cup soy sauce
  • 1/2 cup organic cane sugar (vegan)
  • furikake

Directions

1. Cook the rice first. Short-grain sushi rice works best because it is sticky enough to hold together once pressed into the musubi mold. Let the rice cool slightly so it is easier to handle, but do not let it dry out.

2. Slice the tofu into pieces that will fit inside your musubi mold. Try to keep the slices even so each piece of musubi has the same thickness and shape. Add a small amount of oil to a saucepan or skillet, then fry the tofu until it turns golden and forms a light skin on the outside. Repeat until all tofu slices are browned.

3. In the same pan, add the soy sauce and sugar. Stir gently as the sugar dissolves into the soy sauce. 4. In a separate pan, cook the vegan egg alternative the same way you would cook a thin egg layer. Once it is set, slice it into pieces that will fit inside your musubi mold. Keeping the pieces close to the same size as the tofu will make the musubi easier to assemble.

5. Assemble the musubi. Place a half-sheet of nori on a clean surface. Set the musubi mold on top of the nori, then layer the ingredients. A good order is tofu, vegan egg, furikake, and rice. Press the rice down firmly so the musubi holds its shape, then remove the mold and wrap the nori around the filling.
