I only recently became a regular smoothie drinker. A few weeks ago I tried an unexpected juice-bar combo — spinach, cucumber, mint, celery and apple — and instead of tasting like a bowl of raw greens it was crisp and refreshing. That prompted me to buy a smoothie blender, and it was one of those rare impulse purchases that actually paid off.

Previously my hurried weekday breakfast was a cereal bar and a latte. Now I often make a blend of spinach, kale, banana, dates and chia seeds. It’s more satisfying and makes me feel better throughout the morning (though I do check my teeth for green flecks before meetings).

Getting the children to enjoy green smoothies has been more challenging. A once-popular “green dinosaur” smoothie met with initial excitement, then polite enthusiasm, then a half-glass left on the counter. To make smoothies more appealing I developed this layered rainbow version — visually fun and tasty enough that the kids don’t notice the kale.

The layers are ordered so you don’t have to wash the blender between each one. Simply scrape the jug clean and blend the next set of ingredients. That keeps washing up to a minimum, which is always welcome.

For best results, chill each completed layer in the freezer for 5–10 minutes before adding the next one. That firms the layer just enough to support the next colour and creates a clean separation between layers. Pour or spoon each layer on gently to avoid mixing the colours.

Each large 330ml serving is reasonably low in calories (around 265 kcal in the original calculation) and filling enough to last until lunch. If you prefer smaller portions, you can pour the layers into little bottles or glasses — about 110ml portions make a great snack for children at roughly 80–100 calories each.

The bottom layer is the sweetest, so you get an immediate sweet hit that gradually blends with the less sweet layers as you drink. That contrast of flavours is part of what makes this version especially kid-friendly.

A layered, colourful smoothie that’s healthy, fun and a great way to get greens into picky eaters.

Ingredients

Layer 1 — Banana & almond

  • 130 g crushed ice
  • 2 small bananas (about 80 g each, peeled)
  • 10 almonds
  • 50 ml semi-skimmed milk

Layer 2 — Kale & date

  • 50 g crushed ice
  • 2 Medjool dates, stones removed and roughly chopped
  • 75 g kale

Layer 3 — Blueberry

  • 80 g crushed ice
  • 70 g blueberries
  • 50 ml water

Layer 4 — Strawberry & milk

  • 80 g crushed ice
  • 80 g strawberries, green tops trimmed
  • 50 ml semi-skimmed milk

Instructions

  1. Layer 1: Blend all Layer 1 ingredients until smooth. Very carefully pour about two-thirds of this mix into your glasses, keeping the sides as clean as possible. Leave the remaining third in the jug and chill it in the fridge. Place the glasses upright and level in the freezer for 10 minutes to firm the base layer.
  2. Layer 2: Add the Layer 2 ingredients to the chilled jug and blend until combined. Remove the glasses from the freezer and gently pour or spoon the mixture on top of layer 1. Use the whole batch and scrape the jug clean. If the second layer begins to sink, return the glasses to the freezer for a couple of minutes and chill the jug again. After adding layer 2, freeze the glasses for another 10 minutes.
  3. Layer 3: Blend the Layer 3 ingredients until smooth. Remove the glasses from the freezer and carefully add this layer on top. Use all of the mixture. Return the glasses to the freezer for 10 minutes to firm this third layer.
  4. Layer 4: Finally, blend the Layer 4 ingredients until smooth. Take the glasses out of the freezer and gently pour or spoon this final layer on top. Use all of the mixture and serve immediately. When inserting a straw, be careful not to disturb the layered effect.

Notes

Tip: If you plan to serve the smoothies in small bottles, pour each layer using a small funnel or a squeeze bottle with a narrow spout to keep the lines neat.
